To Mom With Love


The world has a great example of what a mother can do for her kids. One such incident caught my eye when I was going through a local daily, a 43 year old mother lost her life when her house caught fire and she was assuming her teenage son trapped in fire. Though the son was able to save his life and safely come out of the house. It was a sad incident. This article came close to Mother's day, hence I could not help sharing it.


Inspired by 'Mother's Day" even i thought i would do something for her. She herself is a very good cook but still i am dedicating this recipe to 'My Mom' and calling it by her name. I tried it for the very first time and it came out well.


Chicken Saeeda

Ingredients: 350gms Chicken Fillet (slightly pounded)
100 gms Shredded Cheddar Cheese
50 gms Cream Cheese
1 tsp Black Pepper (crushed)
2 tsp Red chili (dry and crushed)
1 tsp Mixed Herbs (oregano, basil, thyme)
3 tbsp Lime Juice
2-3 tbsp Butter( for Basting)
Toothpicks
Salt to taste


Method: Slightly pound the washed and pat dry chicken fillet. Add lime juice and salt to it and marinate for 15 min. Prepare the filling in a separate bowl. Add cheddar,cream cheese ,black pepper, herbs and spices. Fill the chicken fillet with the mixed ingredients and arrange with toothpick in fillet the following way.


















Preheat oven to 180 deg and grill for 20 minutes basting it with butter two to three times. Your end product will look like this.




Note: If you want it Indianised way, you can fry 1 medium onion and 2 large tomatoes( blanched and pureed) in 3 tbsp oil. Include the following pieces in the above gravy and garnish it with coriander. Enjoy it hot.
